​Why would we want to taste something bitter?

Essentially, when our bodies taste something bitter, it sends a signal to our digestive system that food is coming & it is time to get to work. This particular blend is ideal for supporting digestion as well as lymph and kidney function. The coffee taste is very forward, making it quite yummy.

 

Suggestion: drop 5-10 drops on your tongue about 20 minutes prior to eating. Let your mouth really taste the bitter (it's not that bad, I promise) and then swallow.

Our ancestors knew how valuable they were in supporting digestion. In fact, up until just four or so generations ago, bitter foods were commonly eaten before meals to support digestive function. Then, as the western diet evolved, and sweet or savoury things became easier to get, bitter things fell out of fashion. In the 50s and 60s we saw the swan song of bitters with the aperitif.

 

Today, we pretty much avoid "bitter" at all costs; coffee perhaps being the wide exception. Although, that, too, we adulterate with sweetness. The thing is, we need bitterness in our lives. Oh boy...I feel like we could get all philosophical here, but I'm just going to keep to the physical for now.
